Black Elderberry (Sambucus canadensis, S. nigra) is a shrub native to North America, Europe, Western Asia and North Africa. It grows in open and treed wetlands across the Muskoka area. It produces fragrant blooms the size of dessert plates in mid-summer and clusters of black-purple berries in the late summer/early fall that are a favourite of birds, bears and foragers. Elderberries have long been harvested for use in pies, jellies, wine and prepared into syrup. Elderberries must be cooked before being consumed.
