Handeck

Woodstock, Ontario

Gunn’s Hill Artisan Cheese’s Handeck cheese is a hand crafted washed rind cow’s milk cheese that is produced using the same methods as a typical Swiss mountain style cheese. It is available at 24 months old and for December we offer a 2 – 4 year old version. It is delicately aged on cedar wood planks adding robust flavors to the cheese.

It is a drier hard cheese with very rich and complex flavors and nutty overtones. All of the milk used comes from Gunn’s Hill Artisan Cheese’s family dairy farm. It pairs well with red wines and also dark roasted beers.
